Celler de Roure, DO Valencia

While some of us may be familiar with the range of red wines by Pablo Calatayud of Celller de Roure, now it’s the time to taste the white from this most inspiring Valencian producer!

A blend of an enigmatic local variety called Verdil (which is on the verge of extinction,) with Pedro Ximenez, Macabeo and Chardonnay; whole cluster pressed, fermented and aged for 6 months in 17th century, underground clay amphoraes, which remain at the heart of this fascinating winemaking project. “Cullerot” (meaning tadpole) is a wine in which the character of the place it comes from, shines through in its complex flavour profile. Mediterranean rusticity encapsulated in a glass!
